Enjoy This Food

Enjoy Life Foods is something to talk about. In 2005, Enjoy Life was the first company to receive independent gluten-free certification from GFCO. A year later, they were the first gluten-free company to receive non-GMO status for 100% of its products. Today, they offer over 50 allergy-friendly foods. This company has been a staple in our gluten-free household in some fashion for years. I was recently given the chance to write a product review of some of their company, and here are my findings! 
Soft-Baked Snickerdoodle Cookies
Whenever I think of Enjoy Life Foods, the first thing I think of are their soft-baked cookies. These little nuggets of sweetness are about the size of two bites. I tried their Snickerdoodle flavor and discovered the perfect combination of melt-in-your-mouth softness and crunchy cinnamon/sugar coating. I’m a sucker for Snickerdoodle flavor, so these cookies were definitely delicious to me, but to gain a better perspective, my mother, sister, and father enjoyed them as well. 
Pancake & Waffle Mix
I could gush about this mix for hours. I was able to convince my family to have breakfast for dinner the other night so that I could have more people taste the pancakes. The batter was incredibly easy to put together: Simply measure out the mix and add water and oil! The pancakes that my family normally makes are always on the thicker side, so I never get to see the little bubbles that pop up when the griddle cakes are ready to flip (it’s more of a guessing game). As soon as Enjoy Life’s pancake batter hit the griddle, the thin cakes filled with bubbles and were ready to flip: Making a single pancake took roughly three minutes. I was also really impressed by how many the recipe could make! Granted I doubled the recipe, but I was still surprised by the height of the stack it produced. The mix is certified vegan, gluten-free, non-GMO, and free of all artificial ingredients; plus it’s free of peanuts, soy, tree nuts, fish, eggs, dairy, shellfish, casein, sesame, sulfites, and potato (much like all of their other products!). Given the lack of ingredients, I wasn’t sure how the final product was going to taste, but I was pleasantly surprised. I did have to add a little maple syrup and almond butter, but THEY WERE DELICIOUS! They fall apart quite easily, but I was able to make all the pieces into my mouth without a problem. 
​Seed & Fruit Mix
The Mountain Mambo Seed & Fruit Mix is an awesome choice for an afternoon snack. The mix is made of sunflower seeds, pumpkin seeds, raisins, dried apples, chocolate chips, and cranberries. I added some almonds and chowed down. My mom frequently buys this mix, but this was the first time I had tasted it, and I really enjoyed it!

S’mores Soft-Baked Bars
These bars were controversial in my family. We were split on our affection. The nay-sayers claimed that it didn’t taste like s’mores; they still liked the flavor, but not as much as the other half of the group. The rest of us (including myself) really liked these chocolate-coated bars. Enjoy Life has these treats filled under the “Decadent Bars” section on their website and rightfully so. I definitely tasted a hint of a marshmallow flavor and the crunch of a graham cracker cookie; plus I wasn’t complaining about the chocolate coating. I also think these bars are the perfect size for a late-night treat.
