Pancakes

Hello, friends!

So about a week ago, my parents came back from the lovely land of Costco with a package for me: pancake mix.

If you know me, you'd know that I'm not a big breakfast person. In fact, almost every day it's usually just some toast (with either ghee butter, almond butter with a little honey, or Kite Hill's chive cream cheese) or just some fruit before I head to the gym. (The gym is then followed by a PlantFusion protein shake, OF COURSE*.) The moral of this minor rambling is that my favorite "breakfast foods" are basically pancakes and waffles, usually made from Pamela's Products. (The sarcastic quotes are because eating pancakes as the first meal of the day feels like I'm cheating the system some how.)

But on the day of the Costco adventure, my parents introduced me to Birch Benders and their Paleo Pancake & Waffle Mix. The company thrives on pancake/waffle mixes and frozen waffles (the best breakfast food to get behind on those lovely, lazy Sunday mornings). Their Paleo Pancake mix that we tried is certified gluten-free and also dairy-free. For a single serving (of which I had a few), there's 7g of protein! The ingredient list of this mix is crazy: cassava starch, organic coconut flour, almond flour, eggs, leavening, salt, monk fruit, and spice. 

Oh, and did I mention that the directions were basically just "add water and cook until golden brown on both sides"?

Naturally, I wanted chocolate chips in my pancakes. I used Enjoy Life's* mini semi-sweet chocolate chips. 

The end result of this particular pancake mix and those chocolate chips (combined with my Dad's innate ability to perfectly cook any and all pancakes) was heaven. The pancakes were light and airy, and the mini chocolate chips provided just enough sweetness (plus the bit of Trader Joe's maple syrup didn't hurt). I plan on secretly confiscating the rest of the mix and taking it back to my apartment with me (don't tell my parents).

*As soon as I wrote this, I checked my archives and was horribly notified that I haven't talked about my PROFOUND LOVE of PlantFusion on this blog before. Don't worry: That will come soon enough.
