About two weeks ago, I received a lovely package from the awesome peeps over at Enjoy Life Foods. Inside was goodies galore, which included a bag of their mini chocolate chips. My first thought was “PERFECT! An excuse to make pancakes!” So I set the bag of chocolate on the counter as a reminder to buy pancake mix the next time I was at the grocery store. (I even wrote in my planner—aka my life—that I needed to make pancakes this week.) On Tuesday of last week, the weather forecast said that it would be snowing, but being a skeptical snow person (that’s a new term I’ve just coined), I wasn’t really buying it. Wednesday morning, classes were canceled and my university was closed because it actually did snow. When I finally got out of bed (spurred on by the snaps from friends), I was surprised to see a thick blanket of snow on the ground…and basically everything. Although I was bummed about my classes being canceled (because I am a nerd and was really looking forward to them), I rushed through breakfast so I could get dressed and go outside. Much like the toddler who was squealing with delight (as it was just her, her parents, and myself outside at 9:30 in the morning), I was in snow heaven…for about 20 minutes until my fingers got too cold from building as many snow balls as I could and then slamming them on the ground I texted my friend later that afternoon and asked if she wanted to walk up the road to the local health food store so I could buy some pancake mix. Bundled up for the second time, I headed out into the snow and ice (and only almost slipped once). The health food store had a bunch of gluten-free pancake mix options, but I had to go with my family’s tried-and-true, our favorite: Pamela’s Pancake Mix. (I’ve actually gushed about this mix before!).
Fast forward to Friday, and all I’ve been talking about for days is pancakes. (I talked about pancakes and Friday so much that my parents started calling it “Pancake Friday.”) Oh man. Those fluffy disks of dough with little bits of chocolate browned up beautifully. I served myself my own creations with a little almond butter and maple syrup (that I bought for the occasion). Thank you, Pamela, for creating such a delicious pancake mix. Thank you, Enjoy Life Foods, for creating decadent little pieces of allergen friendly chocolate.
